Ganso Tamaruya is a specialty udon shop located in front of Mizusawa Kannon, run by generations since its founding in Tensho 10 (1582). It is regarded as the original and main house of “Mizusawa Udon,” serving customers with a deep commitment to both noodles and dipping sauce using traditional methods and techniques. Udon is made from very simple ingredients—wheat, water, and salt—yet Tamaruya draws out the wheat’s natural aroma and sweetness by aging the dough before noodle-making. The broth is created through the harmony of kombu, katsuobushi, and magurobushi, resulting in the shop’s distinctive flavor. They also welcome guests with menus paired with fresh, delicious ingredients. Popular options include the slightly brown whole-wheat udon “Koden Kirimugi,” Tamaruya-style simmered udon “Niuma-men,” and “Shikaku Shimen,” made using long-preserved techniques—noodles that go beyond typical udon expectations. When visiting Mizusawa Kannon, it’s recommended to stop by.
