Morioka Jajamen HOTjaja is a specialty shop where you can enjoy Morioka Jajamen, one of the "Morioka Three Great Noodles" alongside Morioka reimen and wanko soba. The roots of jajamen trace back to zhajiang (jajang) noodles from the Chinese mainland, and it is said to have arrived in Morioka about 50 years ago. At HOTjaja, you can savor their carefully made jajamen using house-made noodles and a meat miso that also incorporates local Iwate miso. One of the joys is customizing the flavor right before eating by adding grated ginger, chili oil, grated garlic, and vinegar to find your personal favorite balance. For the finale, the recommended "chiitan soup" is made by adding a raw egg to your empty bowl and mixing it with the noodle-boiling water—letting you enjoy the dish all the way to the last sip. In addition to jajamen, the shop offers items like jajamiso-don, fried rice, and gyoza, plus value sets and snacks, so you can enjoy more than just noodles. With an excellent location about 2 minutes on foot from Morioka Station, it’s an easy stop—perhaps even right before your Shinkansen ride home.
