Hakuryu Honten is the original birthplace of Morioka’s beloved "jajamen," one of the "Morioka Three Great Noodles" alongside wanko soba and reimen. This is the flagship location of "Hakuryu," which operates four shops in Morioka City. Jajamen is a local specialty featuring thick, flat noodles—similar to kishimen—topped with Hakuryu’s signature meat miso, finely chopped green onion, and cucumber. Customize it to your taste by adding table-seasonings like chili oil, ginger, and garlic, then mix thoroughly before eating. Because everyone’s seasoning choices are different, you can create your own perfect bowl of jajamen. Its addictive flavor is so popular that many visitors find themselves craving it again. The secret to Hakuryu’s jajamen is said to be its special meat miso, stir-fried with ground meat and vegetables such as shiitake mushrooms. When you’re down to about one last bite of noodles, ask for the classic post-meal treat: "chitantan," a warming soup made by adding egg and meat miso and blending in the noodle cooking water. It’s the delicious finale that makes a jajamen experience complete. Hakuryu Honten is easy to reach from Morioka Station: take a bus and get off at "Kencho / Shiyakusho-mae," then it’s right there.
