Komego Gozaemon Sushi

Yonago’s “Gozaemon-zushi” (Yonego Gozaemonzushi) is a long-established maker of traditional mackerel pressed sushi, founded in 1902 (Meiji 35). This style of saba-zushi is said to originate from sailors’ boxed meals handed down in the San’in region since the Edo period: thick, richly flavored mackerel paired with kombu in a pressed-sushi style. While preserving tradition, the makers have continually reviewed and refined their methods, leading to the modern Gozaemon-zushi. Even as AI and mechanization advance, it is still carefully handmade, creating a distinctive, heartfelt flavor. Ingredients are a key point: kombu is premium makonbu from southern Hokkaido (Donan), and the rice for the shari is selected from Tottori-grown varieties known for stickiness, gloss, and good vinegar absorption. Official sales locations in Tottori Prefecture are: “Omiyage Rakuichi Yonago” (right by JR Yonago Station East Exit), Takashimaya Yonago, and “Okashi no Kotobukijo.” Because you can buy it at major travel hubs, it’s a recommended Yonago gourmet item to pick up during your trip.
